This recipe was a combination of my mother-in-law’s friend’s recipe and what we had in the fridge to make it up. It tastes so fresh and light, the mint in this would make it the perfect accompaniment to chicken or seafood.
- Spinach leaves
- Chopped fresh mint
- Half an avocado diced
- Slivered almonds
- broccoli / broccolini
- Snow peas
Cook quinoa according to packet directions. Rinse and place spinach leaves and alfalfa in a bowl with freshly chopped mint, a diced avocado, toasted slivered almonds and blanced broccoli and fresh snow peas!
For the dressing we mixed a tablespoon of olive oil, a teaspoon of dijon mustard and a tablespoon of white balsamic vinegar. Add a squeeze of fresh lemon and pepper to taste!
