If there is one thing that I can take away from my days of competing in fitness model competitions is that lunches can be made super quickly and super easily!
Some of you may have children, work in corporate jobs, be stay-at-home mums – whatever you “are” there are healthy lunch ideas out there for you! The best advice I can give you is that just because you’re busy, doesn’t give you an excuse to not eat healthy. There are plenty of options including pre-planned and batch cooked meals like shepherd’s pie, stir fry, plain chicken and steamed veggies, tinned food like tuna or salmon and salad, or healthy frozen meals. The options and variety of meals is endless!
There are plenty of ways you can stay on track and accountable by creating healthy meal plans for your week. Here are 5 healthy lunches I’d like to share that gets me through my week stress free!
- Chicken & Veg stir fry with rice
This is a super easy one to batch cook up on a Sunday afternoon. I dice up some chicken breast, add in some veggies (zucchini, broccoli, carrot, onion, bok choy, mushroom, capsicum) along with Chinese five spice, fresh garlic and ginger and a little oyster sauce and I’m set! I make up enough for 3-4 days and freeze some, and add in those quick-pack rice and I’m done!
- Frozen / Freezer meals
I tend to keep frozen meals in my freezer for those times when I’m too busy to do a meal prep on a Sunday and need something for work on a Monday to tide me over at work. I love Weight Watchers frozen meals.
They’re available in three menus, Light, Classic and Gourmet with varying cuisines too! I managed to get my hands on the Beef Bolognese from the Light menu as well as the Thai Green Chicken Curry and Lime & Coriander Fish from the Gourmet menu.
The Thai Green Chicken Curry tastes fantastic, has the right amount of zing and the edamame beans in it are delicious!
- Omelette with veggies
If you’re at home, or have an amazing kitchen at work an omelette is a great lunch idea! Add egg whites rather than just whole eggs for a little extra protein, along with veggies and you’re set for a healthy and nutritious lunch!
- Tin tuna, beans and pre-packed salad
I always keep tinned tuna in my drawer at work for this reason. You can quickly grab a pre-packed salad from the supermarket and a tin of four-bean mix and you’re set. So yum and so tasty too!
- Super smoothie
If you’re really stuck a smoothie is the ultimate healthy lunch in a hurry meal. Add some protein powder, some spinach for green goodness, cacao and a banana or berries and you’re set.
