The pistachios provide good fats – and the matcha is a powerhouse of antioxidants, that release energy slowly, boost the metabolism, and protect the health.
And together, they have a wonderful green colour and taste delicious!
Note: Ensure you use high quality matcha green tea powder, so you receive the full health benefits. Low quality matcha can be very bitter. We recommend Zen Green Tea as their matcha is premium, locally sourced from sustainable farms in Japan, and contains the full health benefits.
Makes 20 Bliss Balls
- 1 tsp matcha (we recommend Zen Green Tea)
- 1/2 cup raw cashew nuts
- 2 tbsp almond meal
- 1/2 cup unsweetened desiccated coconut
- 2 tbsp coconut flour
- 2 tbsp water
- 2 tbsp rice malt syrup
- 1 tbsp coconut oil, melted
- ¼ cup pistachio nuts, shelled & chopped
In a food processor, mix together the matcha, cashew nuts, almond meal, desiccated coconut, and coconut flour, until it reaches fine crumbs.
Add the water, rice malt syrup and coconut oil. Mix well. It should be sticky enough to hold together, and form the balls. If the mixture is too sticky, add a little more coconut flour. If it’s too dry, add a few more drops of water.
Using your hands, roll the mixture into 20 balls. Then roll them in the pistachio nuts, to give them a firm coating.
Pop in the fridge to set for a minimum of 2 hours, and store in an airtight container.
